I love to put together a casserole for dinner from whatever is fresh in my fridge.
This one was good and I'll make it again .
2 cups each...broccolli and cooked basmati rice.
1 1/4 c grated carrot
1 1/2 c diced bok choy
3/4 cup salted cashews
2 cloves garlic minced
1 tbsp ginger minced
1 1/4 c vegetable broth.
mix in bowl
I added a bit of fresh basil from the garden.
9x11 casserole dish
Bake covered 375 degrees for 45 min.
This makes a nice side dish.
It was a fun morning at the mouse house.
Last bit of play at night. Lights must be turned off to convince this gal it's bed-time.

The meal looks delicious and healthy. Allie is very pretty! I do remember how playful and destructive our Labs used to be...those big feet and always wanting to chase something. I used to have Impatients growing on the front porch in the summertime and all it took was speaking to one of the Labs and their big heavy wagging tail would swipe the blooms right off the plants. We sure loved them though.

ReplyDeleteAllie is a big girl, and I know how full of life those Labradors can be, a bit like a "bull in a china shop" but ooh, so very loyal.
