A great pumpkin recipe

"Max, get your furry buns in here before you freeze." Max is an indoor-outdoor cat and he is on his own until Monday with his personal assistant (that being me). I drop in in the morning and he goes out. Then I drop in in the afternoon and he comes in. That's the way he likes it and he is a happy boy. He loves that I can open a cat food can and tear the top of the temptation bag. He gives me 4 PAWS UP!

I have a great pumpkin bread recipe for anyone interested. I made two today and Gary and I have managed to polish off half of one already. This is the BEST PUMPKIN BREAD recipe I have come across and I found it in blogland.  Her blog is called Snap Peashttp://www.snap-peas.com/
Here's what you need:
2 sticks of softened butter (1 cup)
3 cups of sugar
3 large eggs
Beat well in a bowl
In a separate bowl combine...
3 cups of flour
1 teaspoon each of baking powder, baking soda, salt, cinnamon & crushed cloves.
1/2 teaspoon of nutmeg
Add to butter & egg mixture, alternting with 2 cups of pumpkin. Mix well after each addition.
Stir in 1 teaspoon vanilla extract, 1 cup raisins and 1 cup chopped pecans (raisins and pecans optional)
Pour into 3 9x5x3inch greased and floured baking pans
Bake at 350degrees for 1 hour or until toothpick comes out clean

I topped the bread with crushed pecans

This is absolutely DELICIOUS! My sister bakes all the squares and cookies for the family at Christmas. She's just the best at it so we are happy to oblige. There are so many calories in my freezer right now, thanks to Diane,  that I gain weight just walking by it.

I think I am done Christmas decorating. I have run out of steam. Other than kitty-sittin' and wrapping gifts I plan to TRY to have a relaxing weekend. So amongst all the chaos this weekend, do try to stay calm and put some time aside for yourself. Have an eggnog!

    That recipe sounds delicious!!!! Can't make it now (Weight Watcher's) but I know where to come to when I am able to!! Thanks for sharing it!
    Riley is precious and I am sooooooo loving hearing John Denver sing "Sunshine On My Shoulders" brings back WONDERFUL memories of my college days! <3 <3

  2. Your pumpkin bread sounds delicious! What cute kitties. And Ry is a darling wee baby! I agree... enough is enough with the decorating. Enjoy the holidays... probably not eggnog for me, but hot spiced cider would be good! :-)

  5. The bread sounds DELICIOUS and it is going to be a good COLD week to try it! If anyone deserves a break it is you!! You make MARTHA look lazy with all that you do and how beautiful it all looks. Max looks like a character! Riley as always,cute as a bug!! Did you get the pics of Rosie I sent? Have a RELAXING great weekend!Got a wedding today and then a formal dance for my oldest tonight. THEN I RELAX LOL!!!
