One week down.

Well, we've seen enough rain for awhile.
It poured last night and the power was out for hours. Our lanterns came in very handy.

Little Gwyn is 1 week old today. I can say the week went fast but I'm not sure the parents would agree. Little sleep, grabbing a meal when the opportunity presents itself and getting to know this beautiful child has left them tired but happy. I spent a good part of the morning cooking for them (Jess's favorite chicken casserole) so they don't have to worry about dinner for two nights. These two are becoming pros at this, though. They have a routine down now and everyone is starting to get more sleep. Whew!

Chicken Casserole
You need cooked chicken, 1/4 of a small onion chopped, 3 small cooked carrots chopped into coins, a cup of cooked green beans or broccoli,  1/2 cup of mushrooms, cheddar cheese, one can of mushroom soup, worcestershire sauce & home-made bread crumbs or croutons for the top.  Very simple.
Put a layer of cooked chicken on the bottom of a casserole dish.  Sprinkle cheddar cheese on top. Layer cooked onion, carrots and green beans on top of that. Sprinkle with cheddar cheese. Saute mushrooms in butter, basil, thyme, oregano and pepper. Put a layer on top of the last layer of cheese. Add a bit more cheese on top and cover it all with a cup of mushroom soup mixed with 1/2 can of water & a tbsp of worcestershire sauce. . Layer with home-made croutons. Bake at 375 for 25 minutes or until you see it bubbling. Serve with rice. Delish.

For the home-made croutons just slice a healthy bread into small cubes. I use about four slices for one casserole. Melt butter in a pan and add a pinch of  garlic, oregano, parsley and pepper. Add bread cubes and cook until they are golden brown.

The Fall weather has now appeared. It is wet and cool for the next few days.

Audrey has been keeping busy with her ESS and her cat-gym. In the evenings I give her a good brushing and she loves that, too. That's a real bonus.
She's been behaving herself of late. I guess she knows I'm a little pre-occupied with things.

    In your recipe you state 'Layer COOKED onion, carrots and green beans.......are the carrots and green beans COOKED too before you add them? This sounds good and i really want to give it a try...just trying to clarify......Hugs!! Deb

    1. My mistake. Yes, be sure that all veggies are cooked since you are only cooking the casserole to melt the cheese and heat it through. Thanks for asking. Hope you enjoy it.

  6. Audrey's expecting to be kept fully up to date for her personal approval on any visits from the newest little one.

    That recipe sounds quite similar to one my mother made, though I think she'd have gone exclusively for broccoli as opposed to green beans, and she'd have used gouda cheese instead of cheddar.
