Let's talk 'dishes'

   Pumpkin Muffins
(you can centre the walnuts better. Mine must have rolled on the muffins :( )
You need:
1 cup butter
2 3/4 cups sugar
3 large eggs
Beat well.
In a separate bowl, combine
3 cups of flour
1 tsp each of baking powder, baking soda, salt, cinnamon, cloves.
1/2 tsp. nutmeg

Add this to butter/egg mixture alternating with 2 cups of pure pumpkin
Add 1 tsp. vanilla extract


Optional...1 cup raisons, 1 cup chopped pecans


Bake at 350 degrees for 25 minutes.

Cheesy scalloped potatoes

Here's what you need.
Enough raw potatoes sliced thin to fill your roaster or casserole dish
Put a bit of butter on bottom of dish
Then a layer of sliced potatoes
salt and pepper to taste and sprinkle with cheddar cheese
Add another layer of potatoes
Add chopped onion, more cheese and a dab of butter
Repeat
Pour milk over this dish 3/4 of the way up the side
salt and pepper and sprinkle more cheese on the top
Easy-peasy!
Bake this for at least 1 hour at 375. Stick a fork in to see if they are done.

Branana Bread
Here's what you need...
1/4 cup of butter
1/2 cup sugar
1 egg
1 cup bran
1 1/2 cups mashed bananas
2 tbs. water
1 1/2 cups of flour
1 tsp. salt
2 tsps. baking powder
1/2 tsp. soda
1 tsp. vanilla

Cream the butter and add the sugar. Add the egg and the all bran. Mix thoroughly.
Stir the mashed bananas with the water.
Sift together the flour, salt, baking powder and baking soda. Add to the cream mixture with the bananas. Add the vanilla and mix well. Turn into a greased 8 x 8 cake pan or a loaf pan. Bake in a preheated 350 oven for 1 hour.

Cali here. Wanting to share a recipe for Blueberry Banana muffins that I consider
GUARD-WORTHY
Just try and take the last one. 

Here's the recipe...

1 cup whole wheat flour
3/4 cup all purpose flour
1/4 cup wheat germ
1 tsp. baking soda
1/2 tsp. salt
1/2 cup butter
1/3 cup sugar
1/3 cup brown sugar
2 large eggs
2 ripe bananas
1/3 cup milk
1 tsp. vanilla extract
1 cup frozen blueberries

Preheat oven to 375. Line  a 12 cup muffin pan with paper liners. In a bowl, whisk together flours, wheat germ, soda and salt.
In a large bowl, beat butter and sugars with a mixer. Add eggs beating well after each addition. In another bowl, mash bananas with a fork, stir in milk and vanilla.
Alternately add flour mixture and banana mixture to butter mixture. Mix just until combined. Fold in frozen blueberries.

Bake 25 - 28 minutes

A tradition in our home at Christmas is to bake pumpkin pie for dessert on Christmas day. This recipe was passed down to me by my mother-in-law and I have to say it is the creamiest, dreamiest pumpkin pie recipe ever tasted.
                                       Mabel's pumpkin pie
This makes 3 pies.

3 cups pumpkin (cooked or from a can)
2 1/2 cups sugar
2 teaspoons cinnamon
1 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon salt
3 eggs - 3 cups of milk - 1/2 cup of cream
Combine cooked pumpkin, sugar, spices, salt & egg yolks only beaten with milk. Beat egg whites until stiff and fold into pumpkin mixture. Finally add cream and stir.
Cook at 350 approximately 40 minutes.
