Apple Quick Bread and Tasha Tudor

I'm going to have to have a talk with papa turkey next time I see the family because this morning we almost hit him on our road. He came out of the ditch and walked right out in front of us with twelve more in tow. The traffic stopped and all 13 of them  slowly made their way across two lanes. My heart was in my throat as I watched them travel across the road without a care in the world. One honk from a horn got the last one speeding up and rushing to catch up with everyone. That was most likely the same one that dawdles at our house while eating at the feeders.

The weather was cool today so on went the oven to bake a brand new (to me) apple loaf recipe.
I've had a craving for something 'appley'.
I found the recipe in one of my favorite magazines GRIT. The recipe looked intriguing with no butter, no sugar but honey instead.

                                 apple quick bread
3 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 1/2 cups milk
1 cup honey (YUM!)
2 eggs
1 tbsp vanilla
2 cups of peeled, diced apples (preferably tart)
1 cup chopped walnuts or pecans

Preheat oven to 350. Grease 2 9x5 inch loaf pans
In a medium bowl...
Combine flour, baking soda, baking powder & salt. 
Set aside.
In a larger bowl whisk milk, honey, eggs and vanilla together.
Fold in dry ingredients until blended. Stir in apples and nuts.

Divide batter evenly between 2 prepared pans
I then sprinkled a mixture of brown sugar and cinnamon on top.

Bake for 45 minutes. Let cool for 15 minutes. Turn out on wire rack to cool completely. Store in plastic bags. Refrigerate. 

This loaf has a very different texture and I believe it is from using honey instead of sugar. Also there is no butter in it. I found it more like a bread than many other loaf recipes that are more like a cake. We liked it and I'll probably make it again. 

 I made one loaf larger than the other (for the freezer) and baked the larger one for 5 more minutes.


 Today would be Tasha Tudor's 100th birthday.

I've always loved her for her beautifully illustrated children's books.
She also reminds me of my grandmother.

    That bread looks good....it's just about apple/pumpkin/cinnamon time...that is all sounding really yummy to me!

  3. I may try that apple bread--I need to present quick breads and muffins for the several days of our family reunion next month.
    Re turkeys: they don't seem to be blessed with common sense. I enjoyed their regular parades around the back pasture of our other farm/home-however, -it was a nasty surprise to get turkey mites on my feet and ankles after wearing sandals to walk in the pasture where they had been. [Should have known to be wearing my boots as usual!]

  4. Oh, Deb, thanks so much for all the kind words you left on my blog about us losing our Tiger. She will be missed, but we know how blessed we were to have her for 22 years. Most of our kitties have crossed the rainbow bridge around age 16, so I feel like we got a bonus six years with Tiger.
    Isn't Tasha Tudor beautiful? I have many of her illustrated children's books, including two different versions of The Night Before Christmas. She was absolutely amazing! I remember many years ago seeing a PBS special on her. Fascinating.
    Your apple bread/cake looks fantastic! It is definitely getting to be baking weather!

  5. I have most of Tasha Tudor's books and cherish them. She has always fascinated me.

    Turkeys are , well... turkeys ! Smart , stupid and comical, all rolled into a very fun bird to watch. You're blessed to have a flock of turkeys for entertaining bird watching.

    thank you today for remainding Tasha Tudor'a birthday. I LOVE her illustrations, which are difficult to get in Germany, but via internet I know a lot of them.
    I didn't realise that she was still alive in 2008.
    Oh! To think, I could have met her for so many years of my life .....
    I will read her story this evening when work is done.

    Reading about Tasha Tudor inspires me to keep working in my own gardens and to keep creating.

  8. Deb, thank you for remembering Tasha Tudor's birthday. She has always been one of my favorite independent women who lived her life on her own terms. I even got to meet her at a book signing. (She was TINY, like a little bird!) But what a mighty influence she had!

  10. I like simple recipes. This one sound really good. I can guarantee you that mine will not turn out as pretty as yours has! I loved Tasha Tudor too. The library here has a good little video about her that I enjoy watching. I always loved the way her tabby cat slept curled up in her rocking chair. Thank you for reminding me about her.
