Craving comfort.

Comfort food around here includes scalloped potatoes and today's dish had a twist. I made it with three layers, the middle being thinly sliced sweet potato. It was delicious so I recommend you try it.

Cheesy Scalloped Potatoes
In your buttered casserole dish layer one row of sliced raw potato.
Add 1/4 diced onion, one tbsp. of flour, salt and pepper to taste.
Then layer one thinly sliced raw sweet potato and cover with shredded cheese of your choice. I use Gouda and Cheddar.
Top with one more layer of sliced raw potato, a pinch of salt and pepper and cover with cheese. You can top this with fresh parsley if desired.
Carefully pour enough milk over this to come half way up the dish. Bake uncovered for one hour at 375 degrees.

We aren't the only ones who crave comfort these days.

Our birds are eating up a storm. I bought a bag of bagels that were on the stale side so out they go, a little peanut butter added, for the wild-life. And the home-made suet is really appreciated by all the birds. I have a real love-affair with our little brown squirrels. They are much smaller than the grey and black ones and seem much less afraid of humans. They make the best of my offerings, too.

I must be bored. I'm moving dishes around again. 


It's time to get out for a walk and make the best of -2C with sunshine. 
It is hard to pull myself away from reading all the fun blog posts today. Even Audrey was curious. And, the retired-guy has my camera again.

  3. Cats really know how to curl up for their naps. Love that photo of yours. It's -8 here this morning and comfort food has been the norm around here, too. Your scalloped potatoes look fabulous.   4. Our birds and critters have been busy at the feeders to . It has been sunny now for the 4th day in a row and the temps haven't been to bad either so Miggs and I have been out and about the yard and for our walks , but as of tonight a freezing rain storm is to be upon us then rain and then it warms up again . Lovely photos and that looks soo YUMMY! Thanks for sharing , Have a good day !

  5. It's warmed up here, too. As for comfort food, I find that I like almost anything, but those potatoes look especially good. My trouble would be not eating them all at once...

  6. The Hubby treated me to lunch out at our favorite Middle Eastern restaurant on Saturday...that's my comfort food! Garlic sauce, hummus, majadra (lentils). I always overeat, but there was leftovers for Sunday snacks. Food is good!

  15. I never thought of using sweet potatoes with white ones! I will make this for sure! I have been playing with my dishes, too. My kitty Mr. Claus favorite thing to do is keeping an eye on our bird feeder busy with squirrel visiting! Cabin fever here!

  16. The potato dish sounds very tasty and comfortng, especially in such cold weather. The brown squirrels are very sweet. The grey ones in our garden are taking a lot of bird food and we have had to go out and stock up again. Lots of birds eating too thank goodness and our cat is curled up comfortably on his warm fleece blanket:)

  17. That potato dish looks good and for sure would be a comfort food. That is such a good picture of you, and the view from the window looks snowy and cold. Your cupboard is so pretty. Wish there was room to move my cupboard out where I could enjoy it more. It is a pain reaching behind the table and a chair to get at the cabinet. We pretty much live in a mouse house too. :)

  18. Moving dishes around... You are part of what I call the Standing and Staring Club. I think women do that. Stand. Stare. Begin moving around items in the house. Have you heard about the man who ate nothing but potatoes for a year and lost over 100 pounds? It was an interesting news story. Your recipe sounds really good, especially with the sweet potatoes!
