My idea of a good apple cake is one that tastes like apple pie.
This little number does just that.
Slice up 12 apples and mix with 1/4 cup of sugar mixed with 1/4 tsp. of cinnamon. Place in bottom of baking dish.
Mix together 2 eggs, 1 cup of sugar and 1/4 tsp. of vanilla
Add 1/2 cup of oil, (I use olive oil) and 6 tablespoons of orange juice.
Mix together 1 cup of flour, 1 tsp. baking powder, pinch of salt
Add this to the wet mixture
Beat until smooth and pour over the apples.
Bake for 1 hour at 350 degrees.
Easy peasy
Add a little whipped cream and cinnamon on top....perfect for an Easter dessert.
Hope you are enjoying your Spring. I saw some green grass peaking through the snow today and screamed a little. It doesn't take much after 6 months of winter. *sigh*
Today it is sunny and a high of +6. Nothing like past springs where we were out wearing sweaters and running shoes; we are still in the winter gear. BUT...the sun is shining and it is starting to warm up.
Lily & KaneLily is doing ok. That's all I can say right now. I am taking her to the vet for another B12 shot this week and we will have her weighed at that time. I do hope she is putting on a bit of weight with the new food.

He has no problem with the cats, William, because he totally ignores them and wants nothing to do with them. They are of no use to him, I guess. ;-)
