Company in my tomato-filled kitchen.

Who knew that skinning tomatoes could be such a pain in the ...........neck.
But now I have fresh tomato sauce for the freezer so I think, kinda, that it was all worth it.
If you have an abundance of tomatoes like I do, here is a recipe to try for your future pasta dinners.

Fresh Tomato Sauce 
Serve over pasta
1 lb tomatoes
1 med. onion chopped
8 tbsp chopped fresh basil
2 cloves garlic crushed
salt and pepper to taste
1/2 cup vegetable stock
1/2 tsp. brown sugar
2 tbsp. olive oil
Peel the tomatoes by plunging them into boiling water. Leave them for one minute and then plunge them into cold water, then peel off the skins.
Put the remaining ingredients, except the oil, into a large saucepan and stir well.
 Bring the mixture to a gentle boil, then cover, reduce the heat and simmer for 40 min.
Add the oil and remove the sauce from the heat.

Good source of Vitamin  A & C.

There is a lot of cleaning up to do in my kitchen tonight but I have good company. Annie enjoyed her dinner and is now in her 'clean-up mode' herself.

 And now it's time to catch the last of the sun-puddles for the day.

  5. Thanks for this easy recipe. All my tomato plants died this year in the heat, but I will keep this for next year. Annie is so cute washing herself. I love to watch my Snowy do this.

  7. Annie just makes me smile...such a Peach! :) My mother and I used to make tomato sauce (much like yours) every year. What a job, but boy did it taste good in the winter. Enjoy!

  9. Well our tomatoes were such a flop this year, but I will keep the recipe and hope for next summer. Annie is so adorable! Audrey must have been folded up in her blanket asleep?

  15. You need the Italian Velox Passatutto Deb - it takes off the skin and takes out the seeds all at one time! I bought one from Williams- Sonoma some years back after watching my SIL use hers in her French kitchen - not sure if they still have them. Think it was only $25 US and well worth it. This year I didn't grown any tomatoes so haven't made sauce to freeze - hope to get back to that next year! Oh my, going to do an awful lot 'next year', God willing, haha!
