Spring forward

Winter weather is still hanging on
but today is the first day of Spring. Our grand-kitty is home from his surgery and all went well.
Let's bake a cake 
This upside down apple cake is so good and i've been asked again for the recipe.
Here goes...

You'll need about a dozen peeled apples to make this scrumpdillyishus cake. Any kind will do.
No, Sierra. That apple won't do.

2 eggs
1 1/4 cup white sugar
1 tsp. vanilla
1/2 cup oil (I use olive oil)
6 tbsp. orange juice
1 cup flour
1tsp. baking powder
pinch of salt
12 apples peeled & sliced
1/2 tsp cinnamon

In pan, layer & sprinkle apples with 1/4 cup of cinnamon and sugar.In a bowl, beat eggs, 1 cup of sugar & vanilla. Add oil, orange juice alternately with dry ingredients.
Beat until smooth. Spoon batter over apples. 
Bake at 350 degrees for 1 hour. (You'll see it bubbling) 

So, we still have snow but the sun is warmer and it is just a matter of time now before the new life starts to burst from the earth. It's such a great time of year.
Get out there, walk your dog or just go for an early Spring jaunt. Winter is behind us now so be happy!

  5. Our dog loves to talk in the woods too, but unfortunately, she picked up hookworm now--probably from deer poop somewhere. We are keeping her on the paths now and giving her some medicine to get rid of it. Happy spring!

  6. Deb, your apple cake looks scrumptious. But I had to tell you that DH and I were in the Mall yesterday and we came across a store called "Teavanna". I went in and asked about your 'flowering tea' and of course they had it. I bought 'Peach Momotaro' and it smells heavenly! Haven't tried it yet, but I'm pretty sure that we will like it.

  7. Delicious cake to celebrate Spring time I feel happy that warmer days with its colours and flowers are near...here in Argentina autumn started and the kittens are playing in the garden with the tree leaves...Yuyú runs after them like a crazy cat she is so playful!
    Glad to meet Hugo he is a handsome boy hope he recovers soon from his dental procedure♥
    Now I´m taking Ema (the profile pic cat)to the vet because of her urinary tract infections, poor darling though she recibes holistic vet care cause her vet is a qualified homeopathic dr,she needs antibiotic treatment for 10 days I thinks it´s in the genes cause her mother suffered from urinary infeccins too.
