Deep dish Apple cake

My idea of a good apple cake is one that tastes like apple pie.
This little number does just that.


Slice up 12 apples and mix with 1/4 cup of sugar mixed with 1/4 tsp. of cinnamon.  Place in bottom of baking dish.


Mix together 2 eggs, 1 cup of sugar and 1/4 tsp. of vanilla
Add 1/2 cup of oil, (I use olive oil) and 6 tablespoons of orange juice.
Mix together 1 cup of flour, 1 tsp. baking powder, pinch of salt
Add this to the wet mixture
Beat until smooth and pour over the apples.
Bake for 1 hour at 350 degrees.

Easy peasy

Add a little whipped cream and cinnamon on top....perfect for an Easter dessert.


Hope you are enjoying your Spring.  I saw some green grass peaking through the snow today and screamed a little. It doesn't take much after 6 months of winter. *sigh*
Today it is sunny and a high of +6. Nothing like past springs where we were out wearing sweaters and running shoes; we are still in the winter gear. BUT...the sun is shining and it is starting to warm up.

Lily is doing ok. That's all I can say right now. I am taking her to the vet for another B12 shot this week and we will have her weighed at that time. I do hope she is putting on a bit of weight with the new food.

  2. My mother used to make a cake very much like that. It was delicious!

    An excellent shot of Lily and Kane. The dog must be able to navigate life in a home full of cats quite well.

    1. He has no problem with the cats, William, because he totally ignores them and wants nothing to do with them. They are of no use to him, I guess. ;-)

  3. lily & Kane have the right idea for a wintery spring day ...napping indoors in sunshine. The scent of apple cake baking only adds to the appeal of a day indoors in your home.

    It's been such a very long winter that spring, once it finally arrives, will be amazingly sweet and beautiful.

  9. Thank you - this recipe sounds just like one my father got from the Toronto Star. My friends were jealous I had a father who baked so well! Hope Lily is on the mend.
